I was inspired this weekend to create a Southern American style Sunday dinner,after watching the Hairy Bikers Chicken and Egg programme.
Last week the boys where in the USA cooking up fried chicken the a local church congregation. In the USA, fried chicken is known as Soul food.As a child my aunt made the best fried chicken, I remember myself and my cousins helping to coat the chicken pieces in the flour. Fried chicken is a staple in my household my children adore it, when made well you will never visit a chicken shop again.
- 1.8kg Chicken cut into 8 pieces (try to get a whole chicken if u know how cut into 8 pieces or ask your butcher to do it. The caracas can be used to make a stock).
- 200g plain flour
- 3tbsp garlic powder
- 3tbsp cayenne pepper
- 1tbsp mixed spice
- 3tbsp dried mixed herbs
- 3tbsp all purpose seasoning
- 2tbsp cracked black pepper
- 2tbsp sea salt
- 1 250g tub plain yogurt
- 1 freshly squeezed lemon
- 500ml cooking oil of ur choice (preferably vegetable/sunflower oil).
Place the chicken in a bowl and cover with the yogurt and lemon juice. Cover & leave to marinade for at least 4hours or overnight. This helps to create seriously succulent chicken.
With the rest of the dried ingredients place into a bag and mix thoroughly. place a few pieces of chicken into the bag at a time and coat in the seasoned flour.
Place the seasoned chicken pieces on a plate best to leave the pieces in a fridge for half an hour to set the coating.
Pour the oil into a large saucepan or deep fat fryer. Place on the heat, when it has reached 180.C the chicken is ready for frying.
Fry in small batches until golden brown,then place onto a rack on a baking tray. Complete cooking in the oven for 15 or until cooked through.

Serve with a fresh salad and corn on the cob.
