Chicken and pumpkin risotto

I’m a great believer in using up all food in my house.


So after Sundays roast, I stripped of the remaining chicken placed into a food bag and placed it in the fridge. The bones where used to create a stock I even put in the leftover stuffing to infuse more flavour.


Then for a midweek meal I thought I would use up my stock and chicken and create a beautiful risotto.
