Traditional Caribbean fruit cake recipe 

​Every year I make a traditional yard fruit cake as I call it. It is a must have and more importantly extremely tasty.

The Caribbean fruit cake is normally referred to as black cake,due to its very dark colour from the rich fruits and the addition of treacle and browning.

Black cake keeps for months and can be used for wedding cakes or christening cakes as it freezes well for those whom like to stick to tradition and keep their top tier.
